Cauliflower Hummus & Quinoa Salad

This is a super-easy lunch idea if you plan ahead and make extra quinoa with another meal like quinoa tabbouleh, and make extra cauliflower hummus. Fast to prep, delicious and filling! Plus quinoa is a complete protein, so it’s sustaining, and will make you feel great.

Cauliflower Hummus Quinoa Salad

What you need:

  • Mixed greens or spinach
  • Cold (or warm) cooked quinoa
  • Cauliflower Hummus
  • Broccoli (or other) sprouts
  • Cayenne or paprika to garnish or spice it up
  • Red/orange/yellow bell peppers (unless you’re doing a candida diet, then skip)

No salad dressing needed! Especially if you load on the hummus like I do.
