Greek-style Oven-fried Veggies

This recipe is inspired by my Greek/Italian husband’s family cooking. It is ridiculously healthy, and quite tasty (in my opinion :), and fairly simple to make and adapt to your own tastes or mood for the evening.

This is for my friend, Sharon, who has also been doing a candida diet, and has been running out of ideas of low-carb, healthy foods to make.

Greek-style Oven-fried Veggies

  • 1 Zucchini
  • 1 Yellow Squash
  • 1 Eggplant
  • 1/2 Small Onion
  • About 4 Cloves Garlic
  • Extra Virgin Olive Oil
  • Lemon Juice
  • Oregano
  • Mint (or basil, if you prefer)
  • Salt
  • Pepper

Preheat oven to 375°F. Slice zucchini, yellow squash, eggplant, onion and garlic thinly (a food processor works great for this). Add oregano, mint, salt and pepper to taste. Drizzle with olive oil and lemon juice and toss. Spread evenly in a 9″x13″ pan, cover with foil, and bake for 20 minutes. Uncover, stir and bake for 10 more minutes.

Serve hot with a fresh drizzle of olive oil, with toasted quinoa-amaranth flat-bread.
